Cannolis are #1 but Cheescake is #2 since I can't find a damn cannoli around here!

I decided to use this card because I was going to post my chocolate mousse and make it today but I forgot that Blake had baseball practice, Blake and Kayla are going to a friend's house, Jake has a b-day party, and my friend Michelle's son is having his party today. Plus I need to boil (and possible let the kids dye) Easter eggs. So we will what gets done!

Ingredients
•6 ounces semisweet chocolate chips
•2 egg yolks
•1/4 cup sugar
•1 teaspoon vanilla extract
•1 1/2 cups heavy cream
Directions
Melt the chocolate over a double boiler setup.Or if you are lazy like me in the microwave! LOL
While the chocolate is melting, in a large mixing bowl, combine the egg yolks and sugar and beat, with a hand-held mixer, until very pale and thick and have doubled in size. Whisk in the coffee liqueur. When the chocolate has melted, whisk it into the egg yolk mixture. Add vanilla extract.
In a medium bowl, whip the heavy cream to medium peaks. Using 1/3 of the whipped cream at a time, fold the cream into the chocolate mixture. Repeat this process until all the cream is incorporated. Transfer the mousse to serving dish and chill for at least 1 hour.
Mmmm desert ;-)
