Greatest Idea Ever!!!
I am a firm believer that everything happens for a reason. Hubby and I have been talking for a couple of weeks that when I get my school refund (I get more grant $ then I have tuition) we should start a cafe/bakery. I have loved baking since I was little. I was never into cooking (until recently when with 5 kids it became a necessity) but I loved to bake. And Hubby has wanted to open his own restaurant since 2004. So this would be a dream come true for the both of us.
Well then I received an email from the financial aid office saying that since I have completed 100+ units, they were no longer giving me financial aid. I freaked out!! Not only could we not open the cafe but I would have to drop out a year away from graduation!! But I could appeal, so that what I did. My counselor wrote a letter saying how close I am to graduation and I wrote one too. I reminded them (in case they can't read my transcripts) that yes I transferred in with 64.5 units BUT I am actually only using 15!! The rest are considered electives since ETSU doesn't offer an equivalent class. We found out last night that they approved my appeal!! WOOHOO!! I don't have to be a college dropout.
Earlier today on facebook, Simply Stacie posted about a new Blog Challenge she is hosting with Family Sanity Reviews, and The Little Yayas. The challenge is called Leap Out of Your Box and the challenge is to do something, start something, face a fear, or change your life somehow. Out of all the entries, the top 10 will be the ones with the biggest, hardest, most scary challenges. Then everyone will vote to decide who is the ultimate challenge champion. They will win $3000 in prizes.
I decided that my 30 day challenge is to open the cafe!!! Well mabe not get it open in 30 days but at least be taking steps in that direction. I think that without this motivation, Hubby and I would continue to TALK about opening a cafe but never actually get one opened. I figure everyday or 2, I will post on how I am doing with the challenge. I need to test recipes, develop a menu, get a fictious business name, business license, find a location... The list goes on and on. Hopefully this will also help for days when I feel discouraged, my readers can chime in with some encouraging words!! I went and made a blog for the cafe and will blog about the challenge there as well. The Crazy Cupcake Please head over there and follow and help support our dream and the Leap Out of Your Box Challenge!!!! THANKS!!!

How exciting!
ReplyDeleteGo for it! I opened my salon an a whim almost 8 years ago and now I find myself paralyzed with fear to post any of the jewelry I make on etsy. So strange that I would leap with both feet into one venture and be so fearful of another.
ReplyDeleteI wish you all the best in opening your cafe/bakery.
Thanks everyone!!!
